As this is the start of Hannukah -- and BTW you don't have to be Jewish to make these! -- here's my favorite recipe for the traditional potato pancakes:
POTATO LATKES
INGREDIENTS:
2 eggs
4 Tablespoons (=¼ cup) grated onion
1 teaspoon salt
¼ teaspoon pepper
2 Tablespoons matzo or cracker meal*
3 cups grated, drained raw potatoes**
fresh or dried chopped parsely (optional)
DIRECTIONS:
BEFORE grating potatoes, beat first 5 ingredients thoroughly; **THEN grate the potatoes (peeled or not, as you prefer), and IMMEDIATELY add them to the egg mixture (otherwise the grated potato quickly blackens). Heat ½ the oil in a wide frying pan, drop in heaping tablespoon-fuls of the potato mixture and spread slightly; fry till golden brown on both sides--add more oil as needed. Blot finished pancakes well on double thicknesses of paper towels, to reduce greasiness.
COMMENTS:
*If you don't have matzo meal or ground cracker meal, just use flour instead.
Keep warm in oven while cooking subsequent batches, till ready to serve. You can refrigerate leftovers (as if there could be any!) in a plastic bag, then reheat in an UN-greased frying pan.
