May I please come over for dinner?

We always jokingly called it Spam and coconuts! But then my son grew up thinking Ortega chiles on hamburgers were “fish tongues”. You had to like puns and have a sense of humor to survive our home!

It sounds yummy!

Never heard of cranberries in it. However, we like to add a little dried dill to our spinach filling.

Also, instead of making Spanakopita in a baking dish, we spread the filling on the buttered phyllo layers, then roll them up jelly-roll style.

I miss Annie.

P.S. Instead of crème fraîche, we use ricotta cheese.

You are so brave to have done this so successfully!

Leave it to you, Corey, to add such a creative special touch to a traditional recipe - cranberries! Definitely trying this!
