The Annual Best Baguette in Paris

Congratulations to Sithamparappillai Jegatheepan of the Fournil Didot bakery (near our place in Paris!) for winning the Best Baguette in Paris Competition (aka the Grand Prix de la baguette de tradition française)! Twice! Jegatheepan now has a one-year contract to supply daily bread to the Élysée Palace.

I wonder what criteria they’re looking for, since there aren’t a lot of ingredients? His baguettes looked like they might be kind of flaky, which would be nice. I would have volunteered to taste all the competitors, lol.

May I please join you at the judges’ table? 😋

“What makes a good traditional baguette is, above all, the resting time.[…] This resting time, called proofing, is crucial for developing the typical aromas of the baguette and also promotes a honeycomb crumb. It is also thanks to this technique that the crust is generally very thin, crispy, and golden.”

Oh yummmm! I have been craving a good baguette lately. You just can’t get a good one in the states that I know of. I went to a French bakery today and though it was OK, not wonderful like his bread looks. Congratulations!
