


Cicadas Financier that’s a first!
A financier is a small, rich French almond cake with a moist, buttery texture and a slightly crisp edge. It’s made primarily with almond flour (or ground almonds), brown butter (beurre noisette), egg whites, powdered sugar, and flour. They’re often baked in small rectangular molds.
In Provençal folklore, the cicada (la cigale) is more than just an insect — it’s a beloved symbol of joy, sunshine, and the Provençal spirit. According to a local legend, God created the cicada to bring happiness to the people of Provence. He wanted them to remember to rest and enjoy life under the sun, even while they worked hard in the fields
