I used about seven heaping tablespoons of flour (a soup spoon). Then one teaspoon of sugar, I think it helps the pancakes brown nicely… maybe not?
I added one small sachet of baking powder, one egg, a full-fat yogurt (125 g), 1/4 cup of sunflower oil, one cup of kefir, and about 1/4 cup of water.

I don’t really follow recipes—I like to read them, watch them, and then just… improvise. I’ve never been great with instructions. Ask my mother—she’ll confirm. Some people call it creativity; I call it a lack of discipline. Either way, this is what came out of it.

The batter is thick—very thick. It kind of bloops onto the grill. There are a few lumps, but not many. Grill them with salted butter. When bubbles form on top and start to pop, I flip—only once.
And somehow, they turn out incredibly fluffy, moist and delicious.
