The Olives

We harvested 88+ pounds from three very young trees.

It takes 9+ pounds to make one quart of olive oil.

There are two pressing mills within minutes from where we live.

    Olivier
    Lorsque chacun des dieux prit un arbre en partage, olivier en fleurs,
    Alcide nous dit-on, choisit le peuplier ;
    Le lierre, pour Bacchus, déploya son feuillage,
    Apollon sourit au laurier.

    De la céleste cour le monarque suprême
    Au chêne décerna l’empire des forêts.
    Minerve à l’olivier dit : » Tu seras l’emblème
    De l’abondance et de la paix« .

  2. Questions, questions!

    How many pressings do you get out of your olives? At an olive oil tasting in the Azores, we expected to like the lightest one best, but to our surprise found we preferred the middle of the three for dipping the local bread.

    Why is it that I can’t stand the taste of olives, but love olive oil? Something in the curing of the fruit, perhaps?
