Cafe de Flore. The French waiter in his long white apron, with a tray poised perfectly on his hand. Swished around, seriously, attentively, listening to the customer's wants, fulfilling their desires. A young women with legs up to the ceiling asked for a scissor with her coffee. Ease-dropping had I misunderstood her request? A scissor was carried out on the waiter's tray, she cut the tag off her new coat, placing the scissor and tag on the table. Not giving much of a thanks, the waiter not bothered, retrieved the scissor and left to attend the next table.

I felt like I was in a movie set, no, no, no, a dab of color in a work of art.

Cafe de Flore we arrived around eight in the evening for a dinner drink. The mood inside the cafe was contagious: The constant French chatter that sounded like birds chirping, the flow of wine, clicking glasses of Moet, the younger woman, the older man, the waiter's discretion as he corked another bottle of wine which balanced on his tray; confidently. The waiter's serviette elegantly on his arm, he remains professionally distant yet aware of every movement. He does not listen to the conversation as he wipes the leftover crumbs from the table on to his tray, he does not react to the flirtatious dance circling around him, he serves silently and with that is the canvas, the strongest color to the fame of Cafe de Flore.

I soaked it in, feeling part of the set, dared to dart my camera in his direction… it is after all a movie set isn't it? Life is art isn't it? I wanted to capture the moment…. no, no, no I wanted to be the moment… 

I raised my hand, he came. I asked for another glass of Medoc and some olives, he smiled and for some reason I blushed.

  1. Sounds like a lovely evening Corey. I have do ask, do French waiters ever converse with the people they are waiting on? It may sound like a silly question but I don’t ever remember conversing with one. I guess it is different in every country. Italians talk to you all the time, Greeks, speak to you but are very polite, Portuguese smile and offer a few words. Or is it just me? Keep on having a great time in Paris with Ladelle. Look forward to the pics of the lovely apartment.

  11. Beautifully told….I was truly impressed with the French waiters when we took our only trip to Paris…elegant professionals…
    (I have 11 year old photos of two waiters…one I remember had a little goatee..and was kind enough and indulged me with posing for a picture.) Great post Corey.

    The Cafe Flore experience – wonderful. I have a little cream jug from Cafe Flore and I did not purchase it in their shop or at the broccante ! I could never be a Cafe Flore waiter as I would have to listen in ! How does he resist ? Either he has heard it all and beyond shock, a brilliant pretender or perhaps profoundly deaf. Jx

    The last time I was at Café de Flore I was with my sister, niece and her husband for breakfast. How better to start off their first visit to Paris! My niece’s husband had never had Café Crème, so he and I drank several(!) Our breakfast ended up being well over $100. We ate very sparingly the rest of the day ;O

    Cafe de Flore was my favorite place to go when I lived in Paris, earlier this year!!! They have THE BEST French Onion Soup ever!!!!! And one time our kind waiter saw that we LOVED the paper table covering and brought new ones out for us to keep! He was so nice! Ahhh i miss paris now!!

    When I grow up I want to be just like you…Your way with words and camera…so thought provoking,magical and timeless…The waiters here in LA are only doing it so perhaps some director or casting agent may see them and want to use them in their next project…that is how it seems in every shop, bar or restaurant you go into…They would never feel that what “they do” is serving someone, they are actors or actresses waiting to be discovered..Unlike this man who takes pride in what he is doing…He is a waiter..that is enough..and he does it with dignity…Beautiful..I pause with your ability Corey..I blush in your company….

  32. Corey, Today was such a contrast to yesterdays Provence Blue. I had a wonderful experience with such a waiter in Barcelona when I was 17. Very professional, young, flirty eyes, beautiful smile, jet black curly hair, white jacket. Salvadore…I knew no Spanish, he knew no English. I ate there everyday for a week. He did ask me out. We did manage to communicate, my parents thought it wasn’t such a good idea. I floated on that memory for quite some time. Thanks for sparking my 56 year old memory and putting a smile on my face. I think I will now have a most wonderful day.

    I do believe that this dapper waiter was the very same one who talked me into having the vegetarian omelette and then praised me for eating the whole thing “crumbs and all.” I love that cafe. Spent many an hour there in October, sipping hot chocolate, writing in my journal, getting things straightened out in my head. A beautiful place to do it! (and yes, I HIGHLY RECOMMEND the vegetarian omelette!)

    This might sound old-fashioned or something, but it is too bad that waitstaff aren’t treated more a professionals and paid better (especially in the states). It can be such an artistic profession, like acting. Wine stewards in the US are similar to waitstaff in Europe, I think. When I visited Spain, where there were many professional waiters, it was such a different experience for me. Nice post!
