Making Pancakes in France for French Husband

France doesn’t have Bisquick.

I said it like a fact.
Like saying the sky is blue or French has too many silent letters.

Yann in his Frenchness reminded me,
“We make crêpes. And galettes.”
A pause.
“We don’t make pancakes.”

Agreed. Sure. Fine. Cultural differences. Elegance. Thin batter. Butter everywhere. Très bien.

But still—
France doesn’t have Bisquick.

That was the beginning, when I first arrived in France.

I started experimenting.

Flour. Eggs. Milk. Hope.
Too thin? Crêpe.
Too thick? Regret.
Too flat? Start again.

Some mornings: victory.
Golden, fluffy, pancakes. 

A small personal revolution on a plate.

Other mornings – cereal.

It’s amazing what you could do when you are determined.
Soon there after- l got the pancake number down. No bisquick, jamais!

    Note, Bisquick changed its formula around 2023. Sadly, it is not the same mix that I loved and used for years.

    I actually prefer crepes, but there are those times when a pancake is good. I grew up with a mom that made pancakes from scratch, not Bisquick. When I started making them I was shocked there was Bisquick. Now my husband makes them, it is usually some sort of Bisquick type mix. But then, I eat crepes which were taught to me by a 13 year old French exchange student that stayed with us once upon a time.
